A RESOLUTION

Honoring Mr. Curtis Jefferson; and for other purposes.

WHEREAS, Mr. Curtis Jefferson was born January 2, 1925; and

WHEREAS, a native of Texas, he is the son of the late Reverend Curtis and Mrs. Carrie Jefferson; and

WHEREAS, Mr. Jefferson distinguished himself as a top chef for the Santa Fe Railroad, where he rose to the rank of Culinary Arts Supervisor for Chefs; and

WHEREAS, during his career he had the honor of preparing dishes for several United States presidents including Lyndon B. Johnson, Jimmy Carter, and Ronald Reagan, and numerous VIP travelers on the Santa Fe luxury train including entertainer Tennessee Ernie Ford and the Julio Gallo wine family; and

WHEREAS, Mr. Jefferson´s famous french toast recipe was included in a cookbook by the renowned singer and actress Pearl Bailey; and

WHEREAS, Mr Jefferson remains active in his community by using his culinary skills to serve patrons at the Veterans Administration Hospital in Topeka, Kansas; and

WHEREAS, he is an active member of the NAACP and dedicated church volunteer.

NOW, THEREFORE, BE IT RESOLVED BY THE HOUSE OF REPRESENTATIVES that the members of this body honor and recognize Mr. Curtis Jefferson on the occasion of his 78th birthday.

BE IT FURTHER RESOLVED that the Clerk of the House of Representatives is authorized and directed to transmit an appropriate copy of this resolution to Mr. Curtis Jefferson.
